Antioxidant Activity of Elderberry Fruits during Maturation

Antioxidant activity (AOA) in fruits of Sambucus nigra and several new elderberry interspecific hybrids involving S. javanica (JA), subsp. (NI), ‘Black Beauty’ (BB), cerulea (CER) racemosa (S. (RAC), var. miquelii (MIQ), tigranii (TIG), kamtschatica—coreana (KOR) at five maturity stages were investigated by applying DPPH (2,2-diphenyl-1-picrylhydrazyl), ABTS (2,2′-azino-bis(3-ethylbenzothiazoline-6-sulfonic acid)), FRAP (ferric reducing antioxidant power) ORAC (oxygen radical absorption capacity) assays. The aim the study was to compare different assays for estimating AOA elderberries, plan appropriate harvest time determine whether most promising genotypes could be predicted advance. All used showed that increased significantly during maturation. correlated with each other reliably determination elderberries. In fully mature berries, significant correlations also found between total phenolic (TP) content all assays, but no ascorbic acid (TAA) At stage, (the stage harvesting), berries (JA × NI) BB MIQ superior TP content. Genotypes higher/lower not advance, while TAA opposite.
